The leaf
The legendary yancha, or ‘rock tea’, grown in the mineral-rich cliffs of the Wuyi reserve and roasted over charcoal in successive passes. That fire gives it the signature yan yun — ‘rock rhyme’ — a mineral, wet-stone depth wrapped in dark caramel and roasted chestnut. Brew it gongfu style and chase the finish across many small cups.
