The leaf
Pressed in Menghai in 2009 and rested in our cellar ever since, this ripe (shou) pu-erh has shed every rough edge. Break a coin from the cake, rinse once to wake it, then brew short and often in a small pot — each of a dozen infusions shifts. Deep, smooth, earthy-sweet, with a camphor coolness on the breath. A single cake is a season of mornings.
