The leaf
Bai Hao Yin Zhen — ‘white hair silver needle’ — is made from nothing but the plump, downy spring bud, hand-picked over a window of days. Barely processed: withered, dried, and left alone. The result is impossibly soft — melon and honeysuckle, a cream-like body, and a finish that lingers far longer than something this gentle has any right to.
